Bourbon Salmon

4  (7 oz) pieces of filleted Salmon

1 cup Bourbon

1/2 cup Brown Sugar

1 cup Soy Sauce

2 teaspoons Worcestershire Sauce

1 teaspoon minced Garlic

1/4 teaspoon Dry Mustard

1/4 teaspoon Onion Powder

1/2 teaspoon Black Pepper 

Mix all ingredients.  Place salmon in a shallow dish and pour marinate over.  Marinte for at least 2 hours.

Heat a large saute pan with a small amount of olive oil.  Place salmon pieces skin side down in pan.  Sear for 4 minutes, gently flip fish over and slowly peel skin away.  Sear this side for an additional 3 minutes.  Turn off the heat, place lid over pan and allow fish to sit for 2 minutes before serving.   Remove lid and flip fish (skinned side down) onto serving plates.
