Grilled Lemon Tarragon Spanish Mackerel

4 Spanish Mackerel filets

1/4 cup olive oil

1/2 bunch chopped fresh tarragon

3 tablespoons fresh lemon juice

3 lemons, sliced to top fish while cooking

Salt and pepperĀ 

Mix all the above ingredients (except the lemon slices) into plastic Ziploc bag, place mackerel filets in this for two hours to marinate before cooking.

Brush a sheet of aluminum foil with oil. Then place foil on grill set for medium-high heat. When foil is hot, place filets on foil then top with the lemon slices. Do not flip filets. Grill until meat just begins to flake. Garnish plate with fresh tarragon

This can also be made in the oven using an oiled flat broiling pan with the same directions as above.
