Pompano in Lemon & Dill

3 tblsp. butter

1/4 tsp. dill (chopped fresh)

1 tbsp. fresh lemon juice

1/4 tsp. salt

dash fresh ground black pepper

1 green onion, or chives thinly sliced

1 lb fresh pompano filets

Heat butter in skillet over medium- low heat. Add dill, lemon juice and green onion, saute' one minute. 

Add pompano filets, basting with sauce from the pan with a spoon, then cover and cook 10 minutes (occasionally baste)

Slide filets on plate and cover with remaining sauce.

Double recipe for every pound of fish.
