Grilled Mahi-Mahi w/Lime Ginger Vinaigrette

4 mahi-mahi filets (6 oz and about 3/4" thick)

1 cup canola or vegetable oil

2 teaspoons minced garlic

2 tablespoons zest of lime

1 tablespoon minced fresh ginger

¼ cup fresh lime juice

½ bunch cilantro; chopped

salt and pepper

Cook ingredients in sauce pan on low heat to develop flavor. Cool completely.  

Divide into two separate batches - one for marinating and one basting/ grilling.

Marinate mahi in above mixture for at least two hours before grilling.

Prepare grill to medium-high heat. Oil grill to prevent sticking

Place filets on grill and brush with vinaigrette

Grill until about 3-4 minutes per side

Transfer to serving plate and drizzle with remaining vinaigrette
